Monkfish Basquaise
Makes one cazuela dish
3 ea 1 oz medallions thinly sliced of monkfish
1 tsp choricero pepper chopped
2 oz white wine
3 oz tomato sauce
3 pc piquillo confit
1. Sear the monkfish in a hot pan
2. Deglaze with white wine
3. Add pepper, tomato sauce, piquillo confit
4. Adjust seasoning
5. Serve in a cazuela
